Sometimes we leave the fruit on the vines and let it ripen and over ripen and sometimes we get just the right conditions and just the right mould and then we make teeny tiny quantities of tart honeyed gold. Sometimes.

| This wine was made with grapes from a young block of Sauvignon Blanc grapes hit by the February rains. As the warm, Indian summer bloomed the rot dried up and the destiny of the grapes changed! The grapes were handpicked in the cool of the morning in May and the berries sorted, crushed and pressed a first time, and then a second time to draw out the precious sweetness. After settling and fermenting in old barriques we finally bottle. |

| Delicate flavours and aromas of apricots and honey make this rich and viscous wine a delight to experience. The subtle hints of its Sauvignon Blanc lineage provide a welcome balance and prevent the wine from being cloying. It has a wonderfully warm, pale straw hue. |
